Louisiana Kitchen writes: This restaurant is dedicated to Peter Finkhauser, Sr. The owners of Louisiana Kitchen & Bayou Bar, Carlos Arana and Jose Blanco, are indebted to the former owner of Louisiana Express in many ways. Carlos was inspired and assisted by Peter to immigrate to the United States. After working for eight years with Peter, Carlos would still be serving all of his favorite customers at Louisiana Express, but for its closure. Jose worked for over twenty years as the Chef at Louisiana Express and was entrusted with the cherished recipes that are the core of the Louisiana tradition.
